Fermentation is a form of anaerobic respiration occurring in microorganisms such as yeasts and bacteria. In a probiotic batch fermentation, the micro-organisms are fermented together at the raw material stage and therefore the proportion of each probiotic strain cannot be determined. The individual concentrations (colony-forming units, or CFU) for each microbe are therefore not calculable, and the stated CFU is for the entire batch.
