Description:
Essential oils are volatile oils characterized by: aromatic-smell; high refractive index (often optically active); low water solubility; liquid and volatile at ambient temperature; oxidize and resinify on exposure to light and air. Expression involves squeezing of the material ( e.g. rinds of the citrus fruit) to extract essential oil. Formerly squeezing was done by hand, but currently expression is done mechanically by scarification or compression. The essential oil, juice and pulp are added to a centrifuge or decanted to separate the essential oil.
