Description:
Oil obtained from plants which is a simple lipid composed of glycerol (1,2,3-trihydroxypropane) and triesters of fatty acids (triglycerides). The oil is characterized as hydrophobic (sometimes amphophilic), soluble in nonpolar or barely polar organic solvents, and non-volatile. Fixed oils and fats differ only in melting point: those that are liquid at ambient temperature are fixed oils; whereas those that are semisolid or solid at ambient temperature are known as fats. Extraction of the fixed oils by expression involves expression using hydraulic or screw presses: "virgin" or "cold-pressed" oil if carried out in the cold but "hot-pressed" oil if carried out with heat.
