Description:
Oil obtained from animals which is a simple lipid composed of glycerol (1,2,3-trihydroxypropane) and triesters of fatty acids (triglycerides). The oil is characterized as hydrophobic (sometimes amphophilic), soluble in nonpolar or barely polar organic solvents, and non-volatile. Fixed oils and fats differ only in melting point: those that are liquid at ambient temperature are fixed oils; whereas those that are semisolid or solid at ambient temperature are known as fats. Animal fixed oil or fats are separated from other tissues (rendering) and further processed by refining, drying, winterization and deodorization.
